Step-by-Step Instructions

  1. Marinate the Chicken: In a large bowl, whisk together the buttermilk, hot sauce, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Add the chicken pieces, making sure they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight.
  2. Prepare the Coating: In a large shallow dish, whisk together the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  3. Dredge the Chicken: Remove chicken from the buttermilk, letting the excess drip off. Dredge each piece in the seasoned flour, pressing firmly so the flour sticks. For extra crispy skin, dip the chicken back into the buttermilk and dredge in the flour a second time.
